This is a very simple recipe for delicious guacamole that goes great with either unsalted corn chips or crispy vegetables, like celery or cucumber. This recipe originally came from the book Fit for Life, and it is one I immediately gravitated to as I started this program many years ago, as it was easy and quick to make, and I loved guacamole already.
Ingredients
- 1 medium avocado
- 1/2 tsp cumin
- 1/2 tsp dried oregano
- 1/2 tsp Spike low-salt seasoning
Directions
First cut the avocado into quarters around the pit, then peel the sections apart. You should now be able to peel away the outer skin. Save the pit if you plan on putting it in the fridge for awhile — discard if you plan on eating right away.
Place the sections into a small bowl with the seasonings, and mash with a fork until smooth and everything is fully mixed.
Enjoy with unsalted corn chips or crispy vegetables like celery or cucumber.
Note: If you plan on having it later, bury the pit in the guacamole inside the storage container to keep it from turning dark.
