This recipe combines raw nuts like almonds and cucumbers for a quick, satisfying meal. It's easy to prepare highly digestible, and extremely nourishing. Make sure to give yourself time to chew everything well.

Also known as “nuts and cukes” in Fit for Lifeyou can pair raw pecans, walnuts, Brazil nuts, or filberts with cucumbers—my favorite combination includes almonds. This dish makes a great transition meal because it’s easy to prepare, tastes delicious, and keeps you satisfied.

The book’s recipe calls for ½ to 1 full cup of nuts, but I’ve never eaten more than ½ cup at a time. As for the cucumber, eat as much as you like—you’ll need it to help wash down the nuts. Peel the cucumbers first, as most store-bought ones have a wax coating. Also, chew the nuts thoroughly to aid digestion, so take your time enjoying this great lunchtime meal.

Ingredients

  • 1/4-1/2 cup raw almonds, or other raw nuts such as pecans, walnuts, Brazil nuts or filberts
  • 1 large cucumber, or more if needed

Instructions

Peel and slice cucumbers into spears, or however you like, measure out the raw nuts your prefer, and enjoy.
